Chestnut Pancakes

These pancakes are full of nutty goodness, packed full of protein, paleo conforming and simply delicious! 

Ingredients

2 eggs 

50g chestnut flour 

100ml almond milk

Chestnut Pancakes

Instructions

  1. Beat your eggs 
  2. Whisk the flour with the egg mixture 
  3. Add the almond milk and beat to a smooth consistency 
  4. Heat coconut oil in a non stick frying pan 
  5. One ladle of mixture makes one pancake so you should get about four from this recipe 
  6. Fry until golden brown on both sides. Flip if you dare! 

Serve with a mixture of fruit and a drizzle of honey or maple syrup. Also great with a drizzle of lemon juice and coconut palm sugar.

To make a nut butter cake, simply smear delicious nut butter between the pancakes and serve with chopped nuts on the top. This is packed with protein and would make a delicious desert.

These pancakes are packed with essential fats, fibre and are a natural source of omega 6. They contain part of the 5g of fat needed everyday, and contain anti inflammatory properties as well as giving you sustained energy, good skin, hair and nails.
