Courgette Spaghetti Bolognese

Ingredients

2 courgettes

1 onion

1 clove garlic

1/2 carrot

1/2 celery

250g lean beef mince (or mince of your choice)

1 tablespoon tomato puree

1 tin chopped tomatoes

1 kallo stock cube in 400ml water

1 tin chopped tomatoes

2 bay leaves

Courgette Spaghetti Bolognese

Instructions

  1. Finely chop the onion, garlic, carrot and celery and gently fry in coconut oil until soft.
  2. Add the beef mince and fry until brown.
  3. Stir in the tomato puree and cook for a few minutes on a high heat.
  4. Add the stock, chopped tomatoes and bay leaves and simmer for approximately half an hour.
  5. Spiralize your courgettes, raw.
  6. Flash fry the courgettes in a shallow pan with coconut oil for a few minutes to heat through.

This is a super healthy and carb free alternative to your usual spaghetti bolognaise. Spiralizers are widely available on the high street and are a fabulous addition to your kitchen cupboards. You can spiralize anything from carrot to mango, and are a fun way for children to eat healthy food.

Courgettes, or zucchini as they are known across the pond, are a member of the summer squash family. They are an excellent source of protein, Vitamin A, Vitamin C, Vitamin K, fibre and very low in cholesterol.
