Strawberry Smoothie

This is the perfect quick breakfast that you can take with you on a morning.

Ingredients

Handful fresh strawberries

Half a banana

Handful of spinach

Handful mint leaves

1 Teaspoon almond butter

1 Teaspoon coconut oil

1 Tablespoon flaxseed

500ml Almond milk

Strawberry Smoothie

Instructions

Simply place all the ingredients in a blender and whizz until you have a smooth consistency. If you would like a thicker consistency, try adding less milk, or add ice into the blender.

If fresh strawberries are unavailable, you can buy frozen ones from your local supermarket. You may be surprised to know that frozen strawberries are often higher in nutritional value as they are frozen almost as soon as they are picked!

A little tip: Just be aware that once the flaxseed is mixed in, the mixture will become thicker and thicker! Perhaps take a little pot with you and add to the smoothie directly before consuming.

Nutritional Information

Strawberries are an excellent source of vitamins C and K. They also have high doses of fibre and fructose, the latter of which may help regulate blood sugar levels by slowing digestion, and the fibre is thought to have a satiating effect.

The almond butter will ensure that you have enough protein to keep you going throughout the morning and the flaxseed will ensure that the fruit sugars are released slowly and help cleanse your gut.

We have added spinach to this smoothie as it is a superfood and will give you energy throughout the morning! Spinach is rich in iron, which plays in important role in the body, central to the function of red blood cells which help transport oxygen around the body, produce energy and are important to DNA synthesis. Spinach is also very high in Vitamin K which is essential for the maintenance of bone health.

Mint leaves are excellent and soothing for people who suffer from IBS or IBD... they also add a little freshness and are simply delicious!
